1 tbsp Mama Tere achiote

1/2 tbsp vegetable oil

1/2 lb Mama Tere jazmin rice

2 ripe tomatoes, peeled and finely chopped

1/2 lb Mama Tere small red beans

3 cups beef broth

4 slices Mama Tere ripe plantain

2 green onions, finely chopped

1 medium carrot, whole and peeled

1/4 lb lean ground beef

4 fried eggs

1 avocado, sliced into 4 portions

4 previously cooked and browned cocktail sausage

4 small round arepas

1/4 lb crispy bacon, chopped into 4 portions
Preparación
- Heat the achiote in a pressure cooker for 3 minutes over medium heat; add the green onion, tomato, and beef broth.
- Add the beans and the whole carrot. Cover the pressure cooker and cook for 30 minutes.
- After the cooking time, remove the pressure cooker from heat, carefully release the pressure before opening.
- Remove the carrot and blend it with the bean broth.
- Add the blended mixture back to the pot to thicken, bring to a low heat and stir occasionally.
- Heat the vegetable oil in a skillet for 3 minutes over medium heat. Add the lean ground beef and stir with a spoon, cooking for about 10 minutes or until well done.
- In a deep pot, add 2 cups of water and the chopped bacon; cover the pot and cook over medium heat for 20 minutes or until the bacon is well cooked and crispy. Remove from heat and place on paper towels to remove excess grease.
- In a small skillet, add two tablespoons of water and the sausages. Cook over medium heat until the sausages are well browned.
- On a grill or skillet over medium heat, toast the arepas on both sides.
- Serve rice, beans, ground beef, crispy bacon, chorizo, fried egg, avocado, arepa, and ripe plantain in equal portions on 4 trays or plates
