This iconic Peruvian dish is much more than a delicious appetizer; it's a burst of colors and flavors that will transport you to the Pacific coast. Causa limeña combines the smoothness of yellow potato with the freshness of yellow chili pepper and the aroma of lime, creating a unique culinary experience.

Ingredientes

  • 3 Mama Tere yellow hot peppers
  • 1 tbsp vegetable oil
  • 1/2 cup Mama Tere peruvian olives
  • 3 lemons
  • 1 kg Mama Tere yellow potatoes 
  • 2 chicken breasts
  • 2 onions
  • 5 chili peppers
  • 3 tbsp mayonnaise
  • 1 green pepper
  • 1 avocado
  • 1 carrot
  • Salt and pepper to taste

Preparación

  1. Peel the potatoes and boil them in water with a pinch of salt until tender.
  2. For the yellow hot pepper sauce, remove the seeds from the peppers and finely chop them. Place the yellow hot peppers in water and boil until tender. Once soft, remove the skin and blend them into a sauce. Set aside for later use.
  3. Cook the chicken in water with one onion, the green pepper and the chili peppers. Add salt to taste.
  4. In the same water used for the chicken, boil the carrots until tender. Once cooked, remove them from the water and shred the chicken.
  5. Once the potatoes are cooked, mash them.
  6. Add to the mashed potatoes, all the other ingredients: yellow hot pepper sauce, vegetable oil, lemon juice, salt, and pepper. Mix well, kneading with your hands.
  7. Add the shredded chicken along with the finely chopped remaining onion, mayonnaise, and a little salt and pepper.
  8. Now it's time to assemble the Causa Limeña. First, take a portion of the mixture and cover the bottom of a mold. Then, place avocado slices on top of the mashed potatoes.
  9. Cover the avocado with the chicken mixture.
  10. Take another small portion of the mixture and cover the entire chicken. On top, place the layer of carrots.
  11. With the remaining mixture, cover the causa limeña completely. For decoration, cut the hard-boiled eggs lengthwise and place them on top of the causa along with the olives. Let it chill in the refrigerator for a while before serving.
