Lomo saltado is a culinary creation of fusion cuisine, blending Chinese stir-fry technique with native Peruvian ingredients like yellow chili pepper, cilantro, and tomato. This savory main dish is traditionally served with white rice and French fries.​

Ingredientes

  • 4 tbsp Mama Tere soy sauce
  • 2 lbs beef tenderloin
  • Mama Tere Jazmin rice
  • 2 red onions
  • 2 Mama Tere yellow hot peppers 
  • Vegetable oil
  • Mama Tere garlic paste (to taste)
  • 3 tomatoes
  • 4 tbsp balsamic vinegar
  • 2 cups beef broth
  • 1 cup cilantro
  • 3 potatoes
  • Salt and pepper to taste

Preparación

  1. Season the beef with Mama Tere garlic paste, salt, and pepper.
  2. In a skillet over high heat, add oil and stir-fry the beef in thin strips.
  3. Add the onions, tomatoes, and Mama Tere yellow hot peppers, and stir-fry for about 3 minutes. Incorporate Mama Tere soy sauce and balsamic vinegar.
  4. Add the beef broth and let it cook for a few more minutes. Taste and adjust salt if necessary, and add finely chopped cilantro.
  5. Cut the potatoes into thin strips, let them rest in salted water for about 10 minutes. Drain the water and pat them dry with paper towels. Once dry, fry them until golden and crispy.
  6. Serve immediately accompanied with French fries and Mama Tere Jazmin rice.
