Peruvian Ceviche

Ingredientes
- 1 tbsp Mama Tere yellow hot pepper paste
- 4 butter lettuce leaves
- 1 seedless habanero chili
- 1 cup Mama Tere corn kernels
- ¾ cup lemon juice
- ½ small red onion
- Mama Tere Chulpe corn
- ½ tsp salt
- Mama Tere Plantain Strips
- ½ cup chopped cilantro leaves
- 1 sweet potato, cooked, peeled, and sliced
- ½ lb of fresh raw sea bass or similar fish (like ono, mahimahi, or bluenose)
Preparación

Rinse and dice the fish into small cubes, then place them in a glass bowl.

Slice the red onion thinly. In a large bowl, mix the fish, red onion, lemon juice, salt, habanero chili, and Mama Tere yellow hot pepper paste. Cover and refrigerate for 20 minutes.
- Before serving, add the chopped cilantro. Divide into 4 soup plates and serve accompanied with sweet potato slices, lettuce leaves, chulpe corn, corn kernels and plantain strips.
