Ingredientes

  • 2 cups Mama Tere white quinoa
  • 3 cups water
  • Mama Tere ground oregano to taste
  • Salt and pepper to taste
  • 1 cup diced mango
  • 4 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 2 cups cherry tomatoes, halved
  • 1/2 cup finely chopped parsley
  • 2 cups diced cucumber

Preparación

  1. Rinse the quinoa thoroughly and bring it to a boil in a medium pot with water. Cook for about 15 minutes or until the water is completely absorbed. You'll notice the quinoa grains expand.
  2. Once cooked, transfer it to a large bowl and let it cool. Once cool, add tomatoes, cucumber, mango, and mix evenly.
  3. For the dressing, mix olive oil, vinegar, oregano, parsley, salt, and pepper in a small bowl.
  4. Serve over the salad and mix everything thoroughly.
