Ingredientes
- 2 cups Mama Tere white quinoa
- 3 cups water
- Mama Tere ground oregano to taste
- Salt and pepper to taste
- 1 cup diced mango
- 4 tbsp extra virgin olive oil
- 2 tbsp balsamic vinegar
- 2 cups cherry tomatoes, halved
- 1/2 cup finely chopped parsley
- 2 cups diced cucumber
Preparación
- Rinse the quinoa thoroughly and bring it to a boil in a medium pot with water. Cook for about 15 minutes or until the water is completely absorbed. You'll notice the quinoa grains expand.
- Once cooked, transfer it to a large bowl and let it cool. Once cool, add tomatoes, cucumber, mango, and mix evenly.
- For the dressing, mix olive oil, vinegar, oregano, parsley, salt, and pepper in a small bowl.
- Serve over the salad and mix everything thoroughly.
