A while back, I uploaded an initial version of this dish, but I was really eager to share this recipe with you. It’s a simpler cazuela, but it’s packed with flavor. The sea taste comes from the EcuAtún tuna fillets, and those living outside of Ecuador can attest that even canned, our product is among the best in flavor. And as it should be, I prepared the crispy rice (cocolón) with @mama.tere.usa jasmine rice. With this combination, you’ll bring a piece of Ecuador straight to your table.

Ingredientes

  • 3 green plantains
  • 2 cans of EcuAtun tuna
  • 1 red onion
  • 1 green bell pepper
  • 2 tbsp of garlic paste
  • 2 tbsp of peanut paste
  • 1 1/2 L of seafood broth or water
  • Achiote oil
  • Salt, pepper, and cumin to taste for seasoning
